Mom’s Goulash

Mom’s goulash was one of my very favorite meals as a kid! I also made it all the time when I was a poor newly wed college student. Good times! It’s cheap, delicious, and will feed an army! It’s also incredibly nostalgic to me and will always remind me of my childhood! One of my ultimate comfort foods!

I also remember googling goulash as a newly wed and found that it’s kind of a Midwest – Italian/american recipe and at the time no recipes could be found for it only the Hungarian or Russian goulash, now the tables have turned and it’s all over the web and you have to try to find Hungarian or Russian goulash recipes. However, this recipe is how my mom made it and how I love it!

What you need

serves 6

1 pound pasta – elbow macaroni or similar pasta
1 jar spaghetti sauce
2 teaspoons garlic powder
1 pound ground beef
1 tablespoon dried basil
2 tablespoons olive oil
1 teaspoon salt
8 ounces cottage cheese
1 cup mozzarella
2 cups corn – frozen or canned
*optional – 1 can diced tomatoes
*optional – 1 can black olives

Instructions

  1. Cook pasta until it’s al dente.
  2. Add olive oil, beef, garlic powder, basil and salt to a pan and cook beef over medium high heat.
  3. Once cooked add sauce (and diced tomatoes if using them) and stir until sauce is bubbly.
  4. Add pasta, corn, cottage cheese, olives (if using them), mozzarella and stir.
  5. Sprinkle with Parmesan cheese.
  6. Serve.
