I love these healthy sweet potato waffles! They are great for a weekend brunch or to make ahead and freeze for easy for a quick reheated waffle during the week.

My healthy sweet potato waffles recipe is delicious and packed with protein and healthy carbohydrates. If you love sweet potatoes like me, or even if you are not totally enthralled with them; you will love these waffles!
What you need to make these healthy sweet potato waffles:
Makes roughly ~ 8 waffle squares
- 3 eggs
- 1/2 cup milk
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- 1 cup cooked sweet potatoes – cooked and mashed
- 1 1/2 cups almond flour
- 1/2 cup flour
- 2 tablespoons sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- In a mixing bowl combine milk, eggs, oil, vanilla and sweet potato and blend.
- In another bowl, combine almond flour, flour, sugar, cinnamon, baking powder and salt.
- Add the milk mixture to the flour mixture then stir until smooth.
- Pour onto greased waffle pan and cook.
- Enjoy!
