Ham and Swiss Crepes

I first had savory crepes a few years ago at a restaurant and I fell in love! Growing up whenever I ate crepes they always seemed to be on the sweet side. These ham and Swiss crepes are totally savory and super delicious! The Swiss cheese sauce is super easy to make too!

My husband hasn’t always been a fan of crepes or at least that is what I thought for ten years of our marriage, that is until I made his savory crepes. Finally I have an excuse to make them for me and him! He loves this recipe and so do I.

I on the other hand love crepes in all their capacities and I also love breakfast! I always have and I always will! I love a warm savory breakfast and these ham and Swiss crepes always hit the spot for me. They are fancy yet totally easy to make!

What you need to make ham and Swiss Crepes:

Serves 6 people and makes ~ 1-1/2 cups of sauce

~10 – 6 inch crepes
~20-30 slices of thinly sliced deli ham
chives for garnish – dried or fresh

For Swiss cheese sauce:
1 cup milk
3/4 teaspoon salt
1 tablespoon corn starch
1 tablespoon water
1/2 cup Swiss cheese
1/2 cup shredded cheddar cheese

Instructions

Add milk and salt to sauce pan, bring to a boil, add Swiss cheese sliced up or grated.
Whisk together cornstarch and water in a small bowl and whisk into the milk mixture.
Boil until sauce thickens, about 2 minutes.
Add Swiss and cheddar cheese and stir until it’s melted.
Fill crepes with 2-3 slices of warmed ham and top with cheese sauce and chives.
