Herby Baked Potato Bites

Who loves baked potatoes!?!? These herby baked potato bites are the perfect party appetizer version of the tasty baked potato! They are perfectly pop-able, 1 or 2 bite sized snacks and guests will love them!

What you need

Makes 24-30

For the potato:
3 medium/large Russet potatoes – cut into 1/4 inch thick rounds
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon poultry seasoning
1/2 teaspoon salt

For the topping:
1 cup sour cream
2 tablespoons dried or fresh Chives
1/2 cup shredded cheese – any kind of cheddar blend
5 slices of bacon, cooked and cut into large bits
2 tablespoons fresh chives for on top

Instructions

Preheat oven to 425 F.
Toss potato rounds in olive oil, garlic powder, poultry seasoning and salt mixture.
Place on a greased or parchment paper lined cookie sheet.
Bake for 35 minutes. Flipping over potatoes half way through.
Allow to cool until they are warm/cool but not hot.
Mix sour cream with chives and spoon roughly 1 teaspoon on each baked potato round.
Sprinkle with cheese, add bacon and sprinkle with chives.
