Young mom adjustments.
When I was a young mom with a new little baby at home. I had recently stepped out of the working world and was adjusting to the companionship of a beautiful bright eyed baby girl. I was in love for sure but totally sleep deprived and just trying to stay afloat in life. My once good social skills had deteriorated and I now rocked back and forth when I wasn’t even holding a baby during conversations. Ha ha If you have been there you know what I am taking about! Becoming a parent forever changes you!
I had a neighbor who most likely secretly knew my situation as she was the mom of 4 kids herself. One day she sent me a text and asked me what my favorite flavor jam was and listed raspberry as an option. I didn’t even think about why she was asking me that, desperate for some social communication, a text message was more than welcomed, I had no pretenses as to why she would ask me such a random question.
A day or so later a big loaf of homemade bread and raspberry freezer jam showed up on my doorstep. I remember feeling so grateful for it! I also was shocked that anyone could give away such a precious thing as raspberry freezer jam. It still makes me a little teary eyed when I think about that moment in my life. I was adjusting, struggling, exhausted but in love with my new bundle. Her kindness meant the world to me. She probably had and still has no idea how much that actually meant to me.
My why.
I always come back to why I love to cook and the reason is connection! I have a life time of experiences where food has brought me closer to someone in the past, present or built a bridge to those in the future. That connection that we all need as humans is the reason I love food, creating and giving what I create. Connection is my why.

I love this apple raspberry version because you still get the goodness of the raspberries but it costs much less to make because you use much less raspberries!
What you need
Makes ~12 small jam jars full
1 -1/2 cups raspberries – crushed
2 cups apple Juice
1 tablespoon lemon juice
5-1/2 cups sugar
1 package of sure pectin jell original – full sugar one
3/4 cup water
Instructions
- Crush raspberries so the total amount of crushed raspberries is 1 1/2 cups.
- Add apple juice, lemon juice and sugar and stir.
- Let mixture sit for 10 minutes, stirring occasionally. You want most of the sugar dissolved.
- In a sauce pan, add sure jell and water and bring to boil for 1 minute.
- Add to the Raspberries, and apple juice and stir well.
- Spoon into prepared jars, leave about 1/2 inch space at the top for it to expand when frozen.
- Let the jam sit on your counter for 1 day before freezing.
