Jalapeno Avocado poppers aka rat tails, not the most glamorous name but it’s a loving term of endearment to those who make them and love them. They usually don’t include avocado but I wanted to make some with avocado and I loved the result!
These are the ultimate party appetizer, they are spicy, cheesy, bacon-y and just plain delicious – best combo ever!
I first had these years ago when my cousin’s who had been living in New Mexico moved back to Utah and made these for a family party. My family is full of spicy lovers so they disappear quickly and have been a favorite of mine ever since.
They can also be made with mini sweet bell peppers for those who don’t love the spice. So if I was bring these to a party, I would make two batches, one spicy and one not.
What you need to make these Jalapeno Avocado Poppers aka Rat Tails (printable recipe card is below)
Makes 20
- 10 Jalapenos – cut in half lengthwise with seeds removed.
- 1 package Cream cheese cut into 20 long slices. (you may have extra cheese depending on the size of your jalapenos
- 1 Avocado – sliced into 20 long thin slices
- 1/2 pound bacon slices – cut the length of your jalapenos
Instructions
- Preheat oven to 425 F.
- Slice Jalapenos lengthwise and remove the seeds (use gloves so you don’t get burned).
- Fill the centers with cream cheese strip, avocado strip and cover the top with cut raw bacon.
- Bake for 35-40 minutes or until bacon is crispy and peppers are softened.
