Low Carb Sugar Cookies

These low carb sugar cookies are refined flour and gluten free! They are also very low in sugar! They taste soft and sweet like a traditional sugar cookie and are super delicious! My kids love these! I splurge a little and add a thin layer of frosting with sprinkles but the cookies are plenty sweet and yummy without any frosting.

What you need 

Makes 15 large cookies 

1-1/2 cups Almond Flour
1/2 cup Cornstarch
1/2 teaspoon Salt 
1 Cup Truvia – (Stevia and sugar cane blend)
2 Eggs
1 Stick Butter – softened
1 teaspoon vanilla
Optional Frosting 
1-1/2 cups Powdered Sugar
1 teaspoons Vanilla
2 tablespoons Cream
Sprinkle Salt

Instructions 

  1. Preheat oven to 375 F.
  2. In a large mixing bowl combine almond flour, cornstarch, salt, and truvia and stir.
  3. Add eggs, butter and vanilla and blend until a wet cookie dough forms. 
  4. On a greased for parchment paper lined cookie sheet, spoon out large tablespoons of cookie dough, allowing room for cookies to spread a little. 
  5. Bake for 10-12 minutes. The sides will start to get golden and that means they are done. 
  6. Allow to cool completely on the cookie sheet before moving to a cooling rack. 
  7. Optional – Mix together all frosting ingredients and spread a thin layer across the tops of cookies.
