What you need to make mini no bake cheesecakes:
To make the crust
1 pack graham crackers crushed
1/4 cup brown sugar
1/2 stick butter melted
To make the cheesecake filling
2 packages cream cheese – softened
2/3rds cups sugar
2 tablespoons milk
2 tablespoons lemon juice
1 tablespoon vanilla
Instructions for mini no bake cheesecakes:
Smash graham cracker in a zip lock bag, add the sugar to the bag then melt the butter and add that to the bag too, mix together then place into the mini cupcake tins and press down.
Place the sugar and milk into bowl and microwave for 1 minute, stir until sugar starts to dissolve. Add the sugar and milk mixture to the softened cream cheese and whip with a whisk attachment on a mixer.
Add lemon juice and vanilla and whip until smooth,
Place into a piping or Ziploc bag and snip one corner off and pipe the mixture into the cupcake crusts. Top with your favorite toppings.
