Serves 6 as a side dish
- 1 Butternut squash – peeled and cubed
- 2 Tablespoons Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- Preheat oven to 425 F.
- In a bowl, toss cubed butternut squash with Olive Oil and Salt and Pepper.
- Place on a baking sheet and bake for 35 minutes.
- Place in a boy or serving dish and enjoy!
