Protein Packed Cottage Cheese Pancakes
You would never guess the secret ingredient in these pancakes is Cottage Cheese! My sister introduced me to the idea of cottage cheese pancakes a few years ago and I created this protein packed cottage cheese pancake recipe for my own use. They taste delicious with syrup, peanut butter, almond butter, jam or just on their own. I use reduced sugar strawberry jam and almond butter on mine and it tastes like a yummy PB & J.
What you need
Makes ~10 medium pancakes
1 Cup Cottage Cheese
3 Eggs
1 teaspoon Vanilla Extract
3 Tablespoons Flour
Instructions
Blend all ingredients in the blender or with an immersion blender and pour onto a greased skillet for pan. Let these brown on one side before flipping over. When you remove them they will seem slightly wobbly but they firm up in just a few minutes as they cool. It may take you a pancake or two to get the hang of them.
