Garlic Herb Parmesan and Greek Yogurt Chicken Roll Ups
Garlic herb Parmesan and Greek yogurt Chicken Roll Ups are a yummy chicken dinner option. They are healthy too! We serve ours with some rice and vegetables.
How to make
Serves 6 People
3-4 Large Chicken Breasts
For the roll up filling
1 cup Greek Yogurt
1 tablespoon Better Than Bouillon – Chicken flavored
2 tablespoons Garlic and Herb Seasoning
1/4 cup Shredded Parmesan
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
For the tops of the chicken roll ups
1 tablespoon Garlic and herb seasoning
Sprinkle of Salt
2 Fresh Tomatoes Sliced thinly
Instructions
Cut chicken breasts in half horizontally. Using a meat mallet or rolling pin pound out chicken until it is about 1/2 inch thick. In a separate bowl, combine Greek yogurt, better than bouillon, garlic and herb seasoning, shredded Parmesan cheese, salt and pepper. Spread the mixture on the tops of the pounded out chicken breast. Roll the chicken breast up, starting on one end and rolling to the other side. Place chicken seam side down so it doesn’t unroll. Sprinkle tops with garlic and her seasoning, salt, and thinly sliced tomatoes.
Bake for 45-55 minutes, time varies because the size of chicken breast may vary. Internal temperature should be 165 F.
