This healthy apple breakfast cake is the perfect breakfast cake to start your day off with! It’s low in carbohydrates and is refined sugar free! You would never know it’s healthy for you because it tastes delicious!
I have a combination of flours in this recipe; almond flour, coconut flour and regular all purpose flour. The reason behind the combination is it creates a lovely texture but more importantly each flour plays a role in keeping blood sugar levels steady. The almond flour is loaded with healthy fats some protein and fiber, the coconut flour is packed with counteracting fiber and the all purpose flour keeps things light and delicious.
You can leave out the coconut flour of you don’t have it on hand and use all purpose flour in it’s place, it will taste great still but have a little less fiber.
What you need to make this healthy apple breakfast cake:
Makes 1 – 9 X 13 cake
- 1 Cup Almond Flour
- 1/4 Cup Coconut Flour – flour can be used in place of coconut flour of you don’t have it.
- 1 Cup Flour
- 1 1/4 Cups Coconut Sugar
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 Tablespoon Cinnamon
- 1/2 teaspoon Nutmeg
- 1/2 Cup Vegetable or Canola Oil
- 1 1/2 Cups Water
- 3 Eggs
- 3 Apples – peeled, cored and diced into chunks
- 1 teaspoon Cinnamon
- 3 Tablespoons Honey
Instructions
- Preheat Oven to 350 F.
- Combine, almond flour, coconut flour, flour, coconut sugar, salt, baking soda, baking powder, cinnamon, nutmeg and mix together. Add oil, water and eggs and mix the batter until it is smooth.
- In another bowl, add peeled and cored apple chucks with cinnamon and honey.
- Pour cake batter into a 9 X 13 baking dish. Sprinkle the batter with apples.
- Bake for 50 minutes or until a toothpick can be inserted and comes out clean.
