Pumpkin Pie

Pumpkin pie is such a delicious staple for the holidays and it is fairly easy to make! This one is filled with delicious spices so it is full flavor and my favorite way to make and eat it. 

The pie pictured in this post is actually a 3 inch pie, I made a bunch of mini pies a few years ago and brought them to people, this was one of them. They were well received and everyone loved them!

I love the idea of a mini pie or personalized pie, they are so cute and perfect for smaller groups or individuals. This recipe will make a full 9-10 inch pie but can be dived into 3 -3 inch mini pies if you want to make a few littler ones. a 3 inch pie will feed 2. 

What you need to make pumpkin pie:

Makes 1 – 9 or 10 inch pie, or 3 – 3 inch mini pies 

  • 9-10 inch pie shell – my homemade pie dough recipe is here
  • 15 ounce can of pure pumpkin puree
  • 2 eggs
  • 1 Tablespoon Pumpkin Pie Spice
  • 2 teaspoons Cinnamon
  • 1 teaspoon Vanilla
  • 1 cup Sweetened Condensed milk
  • Pinch of Salt

Instructions

  1. Preheat oven to 375 F. Bake pie shell for 20 minutes before adding filling.
  2. For the filling. mix pumpkin, eggs, spices, cinnamon, vanilla, sweetened condense milk and salt together and then blend until smooth.
  3. Pour into baked pie shell and bake an additional 20-25 minutes or until the pumpkin filling is set and mostly firm.
