Strawberry pie is such a fresh and yummy form of pie! My first experience with strawberry pie was when I worked in a law office and had a co-worker order one for her birthday! It was piled high with fresh strawberries and it was so yummy! I instantly fell in love with it!
It is also easy to make! I make these mini pies in cupcake tins because they are the perfect size to grab and eat without utensils!
What you need to make strawberry pie:
Makes 1 pie or 10 mini pies
- 1 pie dough recipe. Use my Homemade Pie Crust Recipe here. – Makes 10 cupcake tin pie shells full.
- 1/3 cup cold water
- 1 packet of unflavored gelatin
- 1/2 cup sugar
- 1/2 cup water
- 4 cups fresh strawberries – hauled and quartered.
Instructions
- Bake the pie shell or 10 cupcake tin shells and cool.
- In a small bowl, Add water and sprinkle packet of unflavored gelatin over the cold water and let sit.
- In a small sauce pan, combine sugar and water and bring to a boil.
- Mix the gelatin mixture into the hot sugar and water mixture. Allow to cool to room temperature.
- Toss the strawberries in the gelatin and sugar mixture and drain any excess. Add coated strawberries to cooled pie shells. Gelatin should begin setting once it touches the strawberries but will set completely after sitting in the refrigerator for an hour or so.
- Serve with whipped cream and enjoy!
