These pumpkin gnocchi make for a yummy and festive dinner! You can serve them soft or crispy, alone or with sauce and I promise, if you love gnocchi and pumpkin then you will love them in this recipe.
I love to serve these with some browned sage butter (butter that gets browned with some sage in it so it’s herby and delicious) and Parmesan cheese or with a sausage cream sauce, creamy pumpkin alfredo or your favorite red sauce. All of these options will make for a tasty dinner. My kids liked to just snack on these crispy with melted butter and Parmesan too.
I don’t add spice to my recipe because I don’t think they need any spice, I am a fan of celebrating the beautiful flavor of pumpkin without the spice.

What you need to make pumpkin Gnocchi:
Serves 6
- 1 1/2 cups pumpkin
- 1 teaspoon salt
- 4 cups flour
- 2 eggs
Instructions
- Mix all ingredients together in a mixing bowl.
- Roll out into long skinny tubes and cut into 1 inch sections.
- If you have a gnocchi board roll on that for the little ridges. If you are like me and don’t have one, then use the back of a fork to roll each piece to create ridges.
- Boil in salted water for 2-3 minutes. If you want them crispy, after boiling place into a pan with some butter and cook until they get golden and slightly crispy. Enjoy!
