What would fall be without some pumpkin chocolate chip cookies? They are a fall must bake at my house! I love how they puff up and are soft and moist, almost like a portable pumpkin cake with a little more chew and of course chocolate chips. So yummy!
This recipe can be cut in half if you don’t want a large amount of cookies. The baked cookies can also be frozen separately on a cookie sheet then moved into ziplock bags once frozen so they don’t stick together.
what you need to make pumpkin chocolate chip cookies:
Makes 24 large or 36 regular sized cookies
- 1 1/2 cups pumpkin puree
- 1/2 cup softened butter
- 1 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 1 tablespoon cinnamon
- 1/8th teaspoon ground ginger
- 1/4 teaspoon ground cardamom – optional
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoon baking soda
- 3 cups flour
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 375 F.
- Combine the pumpkin, butter and sugars.
- Blend together.
- Add the eggs and vanilla and blend.
- In another bowl combine all the dry ingredients and spices and mix together.
- Add to the bowl with the pumpkin and butter and mix well.
- Add the chocolate chips and blend together.
- Spoon out 1 1/2 tablespoon dough per cookie for regular sized cookies or about 2 1/2 tablespoons for large cookies.
- Place onto a grease cookie sheet.
- Bake for 11-13 minutes for regular sized cookies or 15-18 minutes for large cookies.
