Pumpkin Chicken Tikka Masala

This Pumpkin Chicken Tikka Masala will not be winning any beauty contests any time soon but it sure delivers on flavor! Serve over rice and pair with some fresh naan bread to make a delicious and comforting fall dinner!

What you need

1 onion

5 cloves of garlic

1 Tbsp olive oil

15 ounce can pure pumpkin puree

1 can coconut milk

2 cups chicken stock

1 Tbsp garam masala

2 tsp red or yellow curry powder

1 1/2 cups spaghetti sauce

1 tsp salt (plus more to taste)

1/2 tsp black pepper

3 chicken breasts shredded

1/2 cup plain greek yogurt

Rice to serve it over

In a stock pot, add onion, garlic, olive oil, garam masala, and curry powder and cook on medium high until the onion softens and the garlic is fragrant. Add the Pumpkin Puree, coconut milk, chicken stock, spaghetti sauce. Simmer for 10 minutes then blend with a immersion blender. Add shredded chicken breast, and greek yogurt and stir. Serve over rice.
