The chocolate chips sink towards the bottom of the muffin and it makes it fun to dig your spoon down and scoop up some of the melty chocolate goodness! Yum!

Here is how to make this healthy double chocolate muffin in a mug:

Makes 1 serving

  • 1/4 cup almond flour
  • 1 teaspoon cocoa or cacao powder
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 1/2 tablespoons sweetener of choice
  • 1 tablespoon semi-sweet or milk chocolate chips
  • 1 tablespoon milk of choice
  • 1 egg
  • Sprinkle of powder sugar

Instructions

  1. In a standard to large sized mug, add the dry ingredients and chocolate chips and stir together. 
  2. Next add the egg and milk and stir again.
  3. Microwave for 1 to 1:10 minutes or until the cake begins to rise up and looks set.
  4. Sprinkle with a dash of powdered sugar and dig in with a spoon! Enjoy!
