These melt in your mouth sugar cookies are among the best sugar cookies I’ve ever had. They really do perfectly melt in your mouth! They are soft, slightly chewy, and delicious!
I created this recipe for my daughters lemonade stand this summer. We sold these cookies for .25 each. People started out buying 1 cookie then returned for another, then back again to grab more for their whole family. My daughter felt like a million bucks when she counted up the $20 she earned in just over an hour. That made the stress of setting up the stand, baking the cookies and making the lemonade disappear.
I have also made these cookies for holidays, family events, work parties and they are always really well received and people ask me for the recipe all the time.
One word of advice when making these cookies, follow the recipe as closely as you can. I don’t usually say that about my recipes because most of them can be interpreted your own way a little, with a few ingredient swaps but these cookies are a little tricky and trust me when I say you have to follow the recipe, cooking temperatures and cooking time pretty closely to get the perfect cookie.
These cookies can be rolled out and cut into shapes with cookie cutters or they can be rolled into a ball and pressed down to give them the cracked edge look. They taste great both ways and it’s totally up to you and how you want the cookies to look.
Here is what you will need to make melt in your mouth sugar cookies:
makes ~1 and 1/2 dozen cookies
- 1/2 cup salted butter – salted, softened to room temperature
- 2/3 cup sugar
- 1/3 cup vegetable oil
- 1/3 cup powdered sugar
- 2 tablespoons corn starch
- 1 tablespoon milk
- 1 egg
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 and 3/4 cups flour
- Frosting:
- 1/4 cup salted butter – salted, softened
- 1 and 3/4 cups powdered sugar
- 1/4 tsp salt
- ~2 tablespoons milk (slowly add until frosting is at desired consistency may use more)
- 1/2 teaspoon vanilla extract
Instructions
- For cookies: preheat oven to 375 F.
- Mix butter, oil and sugars together until creamed and a pale yellow.
- Add eggs and milk.
- Mix flour, salt, corn starch and baking soda in separate bowl.
- Combine with butter mixture.
- blend until dough is smooth.
- Refrigerate for 20 minutes or until dough is firm.
- Roll into balls then press down slightly on them or roll out with a rolling pin and use a cookie cutter.
- Bake for 8-10 minutes.
- The cookies will still be soft when pulled out of the oven, don’t worry about them being underdone they will firm up when cool and the less baked they are the softer they turn out.
- To make frosting. Cream the softened butter, add powdered sugar, salt and slowly add the milk until it’s nice and fluffy. May take more or less milk to get perfect consistency.
- Frost cooled cookies and enjoy.
- Pro tip: freeze the cookies briefly before eating them they will have an even better texture.

We made these last night and yes, they are everything people say they are! We now have a new family favorite cookie! The combination of the cookie with the creamy, smooth frosting is the perfect treat anytime!
