Healthier Cinnamon Crumb Cake is one of my very favorite breakfasts! I love traditional crumb or coffee cake! Unfortunately, I have to watch my sugars in the morning because my blood sugar doesn’t do well with too much. This recipe does NOT make my blood sugar spike and it is seriously delicious! The texture is also kind of addictive! This recipe is a must try!
Update: It’s been a few years since I first posted this recipe and it’s still one of my favorites! I also have a few people that make it regularly. The sugar amounts can be reduced if you are wanting a less sweet cake but if you are used to traditional cinnamon crumb cake them these measurements will be sufficiently sweet. Also, the sugar can be substituted for any sweetener of choice in equal amounts.
What you need to make healthier cinnamon crumb cake:
makes 1 – 9 x 13 cake
- 1 cup almond flour
- 1 cup all purpose flour
- 1/4 cup coconut flour
- 1 cup coconut sugar
- 1/4 cup brown sugar
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk with 2 tablespoons white vinegar mixed in
- 2 eggs
- 1 teaspoon vanilla extract
- 3/4 cup vegetable oil
Crumb Topping:
- 1/4 cup all purpose flour
- 1/4 cup cold butter cut into small cubes
- 1 teaspoon cinnamon
- 1/4 cup coconut sugar
Glaze:
- 1/2 cup powdered sugar
- 2 tablespoons water
- pinch salt
- 1 teaspoon butter – melted
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325 F.
- Pour all cake ingredients into a bowl and mix all together.
- Spray a 9 x 13 glass pan and pour batter in.
- In a separate bowl, combine crumble topping ingredients and sprinkle on top of batter.
- Bake for 40-45 minutes or until toothpick comes out relatively clean.
- Combine the glaze ingredients in a small bowl and when cake has cooled slightly, pour over cake and serve warm or cold.
