Banana Cinnamon Muffins

Bananas and Cinnamon were made for eat other!  This recipe combines the two in a delicate yet hearty muffin that kids and adults will love. Plus it can be made in a blender, mixer or mixed by hand in a big bowl and is super quick and easy!

My 8 year old has been REALLY into bananas lately so she asked….er…. begged me to make some Banana Cinnamon muffins. She also insisted I fill the muffin tins extra full so they would puff up huge! So I filled the muffin tins a little extra than I usually do per her request. She loved the result! We ate half of the batch in a day and froze the rest to be used for a quick breakfast later.

Ingredients

  • 3 Bananas
  • 1/2 Cup Melted Butter
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 Tablespoon Cinnamon
  • 3 Cups Flour or Gluten Free Baking Mix
  • 2 1/2 Cups Milk of choice

Instructions

  • Preheat oven to 350 F.
  • In blender add bananas, butter, sugar, eggs, vanilla, baking powder, baking soda, salt, cinnamon, flour, and milk. Blend on high until all is mixed, Pausing to scrape down the sides to make sure everything is mixed in.
  • If using a mixing bowl, Mash Bananas and mix with sugar, eggs and vanilla. In separate bowl combine Flour, baking soda, baking powder, salt and cinnamon, mix together. Add 1/2 of the dry mixture to the wet mixture, mix, then add half of the milk to the mixture, mix. Add the remaining dry mixture and then the remaining milk.
  • Pour batter mixture into muffin tin liners about 2/3rd's the way full. Bake for 15-20 minutes or until the mixture pops up.
  • It will make 26 muffins.
