Roasted Beet Salad

Ever since I was a little girl I have been obsessed with Beets! This Salad combo really allows them to shine and is full of delicious flavors! The sweet and earthy Oven Roasted Beets (find recipe here), the salty Bleu Cheese Crumbles, juicy Grilled Chicken Breasts, refreshing Chopped Bell Peppers and Crunchy Slivered Almonds Paired with the sweet and slightly sour Orange Poppyseed dressing make this salad a sophisticated salad layed with flavor. Roasted Beet Salad

Ingredients

  • 4 handfuls Fresh Spinach
  • 1 Cup Roasted Beets
  • 1/4 Cup Bleu Cheese crumbled
  • 1 Cup Cooked Chicken Breast (sliced)
  • 1/2 Cup Sliced Bell Peppers
  • 1/4 Cup Slivered Almonds

Instructions

  • Lay down a layer of spinach, followed by all the other ingredients. Top with my Orange Poppy Seed Vinaigrette.
