I’ve been a little obsessed with roasted beets this summer! They have been one of my favorite vegetables since I was a little girl. Something about the earthy, sweet and slightly dirt-like flavor is just amazing. If you are a beet fan then you will love this simple seasoning and preparation that really allows the beets natural flavor shine.

Simple Roasted Beets
Servings 6 People
Ingredients
- 2 Pounds Beets Peeled and cut into chunks
- 1 teaspoon Salt
- 1/2 teaspoon black pepper
- 2 Tablespoon olive oil
Instructions
- Pre-heat oven to 425 F.
- Peel beets and cut into large chunks (around 1 1/2 inch by 1 1/2 inch)
- Toss beets in salt, pepper and olive oil.
- Put onto a shallow metal baking pan and Roast for about 40 minutes or until a fork can easily go through a beet chunk.
