Pan Roasted Zucchini Batons are super easy and super delicious! Plus added bonus is they are healthy too!

To make make these simply chop zucchini into batons then toss in whatever vinaigrette salad dressing you desire!
I love Roasted Red Bell Pepper, Italian, Greek or Balsamic vinaigrette. Sprinkle with a little salt and pop them on the griddle or in a non stick pan on medium high heat until they are slightly golden brown and caramelized, about 6-7 minutes!
These are a great side dish and are totally addicting! Every time I make these for guests they disappear, which for a vegetable says alot!
What you need to make easy pan roasted zucchini:
serves 6 people
- 3 medium zucchini – sliced into 3 inch batons
- 1/2 cup vinaigrette dressing of choice
- 1/2 teaspoon salt
Instructions
- Slice zucchini into 3 inch batons.
- Toss in the vinaigrette dressing of choice.
- Sprinkle with salt.
- Grill in a pan or on a griddle for 6-7 minutes.
Easy Pan Roasted Zucchini
Ingredients
- 3 medium zucchini
- 1/2 cup Vinaigrette dressing of choice I love Roasted Red Bell Pepper, Italian, Greek or Balsamic
- 1/2 teaspoon Salt
Instructions
- Chop up zucchini into about 3 by 1/2 inch rectangles then toss in Vinaigrette salad dressing.
- Sprinkle with salt.
- Cook them on a griddle or in a non stick pan on medium high heat until they are slightly golden brown and caramelized for about 6-7 minutes! , Be sure to flip from side to side to get even cook and color.
